Opt for this healthier version of risotto… Barley “risotto”! It’s extremely creamy with a hint of tang and packed with celery, corn, onions, garlic and sweet peppers. Pile on the spicy Cajun shrimp and you have a complete meal!

- 1/2C barley pearls (serves 2)
- Corn
- Diced onions
- Minced garlic
- Lime juice
- 1/4C vegetable stock
- Cajun seasoning
- 8oz Shrimp
- Green seasoning
- Butter
- Freshly chopped herbs
- Salt
- Black pepper

- Boil barley according to directions then drain water
- Add onions and garlic to a pot and saute until tender
- Add a barley and a dash of Cajun seasoning
- Stir in butter and vegetable stock gradually… constant stirring is key!
- Finish it off with a splash of lime juice, some fresh herbs, salt and black pepper to taste
- For the shrimp, season with green seasoning and Cajun seasoning
- Saute in a pan with some butter and garlic
- Squeeze in some lime juice and a generous sprinkle of fresh herbs, salt and black pepper to taste
