Barley Risotto and Shrimp

Opt for this healthier version of risotto… Barley “risotto”! It’s extremely creamy with a hint of tang and packed with celery, corn, onions, garlic and sweet peppers. Pile on the spicy Cajun shrimp and you have a complete meal!

  • 1/2C barley pearls (serves 2)
  • Corn
  • Diced onions
  • Minced garlic
  • Lime juice
  • 1/4C  vegetable stock
  • Cajun seasoning
  • 8oz Shrimp
  • Green seasoning
  • Butter
  • Freshly chopped herbs
  • Salt
  • Black pepper

  1. Boil barley according to directions then drain water
  2. Add onions and garlic to a pot and saute until tender
  3. Add a  barley and a dash of Cajun seasoning
  4.  Stir in butter and vegetable stock gradually… constant stirring is key!
  5. Finish it off with a splash of lime juice, some fresh herbs, salt and black pepper to taste
  6. For the shrimp, season with green seasoning and Cajun seasoning
  7. Saute in a pan with some butter and garlic
  8. Squeeze in some lime juice and a generous sprinkle of fresh herbs, salt and black pepper to taste
