Mixed Barley and Pepper Shrimp with a Side Slaw

I love doing meal preps as it forces me to make healthy meals, saves me time, money and no hassle to cook every day. It’s definitely worth the time and effort it takes! And of course, it’s even more worth it when it comes out extremely delicious like this mixed barley (a take on fried rice), pepper shrimp with a side slaw (thankfully I still have some in the fridge lol)! Total calories per meal – 260

  • 120g Barley – 437 cals
  • 100g zucchini – 16 cals
  • 50g green beans, finely chopped – 16 cals
  • 30g onions, finely diced -12 cals
  • 10g garlic, finely minced – 15 cals
  • 10g ginger, finely grated – 8 cals
  • 50g carrots, finely chopped – 20 cals
  • 60g sweet pepper, finely chopped – 20 cals
  • 150g cabbage, finely shredded – 40 cals
  • 10g soy sauce – 5 cals
  • Salt and black pepper to taste
  • 5g oil – 40 cals 

TOTAL Kcal = 610

  • 8oz shrimp – 192 cals
  • 15g low sugar ketchup – 5 cals
  • 15g tomato paste – 11 cals
  • 10g green seasoning -5 cals
  • 5g siracha sauce- 5 cals
  • 5g pepper sauce (hot sauce) – 5 cals
  • 15g onions, finely diced – 6 cals
  • 5g garlic, finely minced – 8 cals
  • 5g ginger, finely grated – 4 cals
  • 5g oil – 40
  • Salt and black pepper to taste

TOTAL Kcals = 285

  • 20g Carrots, shredded – 8 cals
  • 50g white cabbage, shredded – 13 cals
  • 50g purple cabbage, shredded – 13 cals
  • 2g apple cider vinegar- 1 cal
  • 45g mayo – 105 cals
  • Salt and black pepper to taste

TOTAL Kcal = 142

  1. Boil barley according to package. In a large frying pan heat oil (mixture of sesame seed, chili and canola), add ginger, garlic and onions and saute for 2-3 mins.
  2. Add the remaining vegetables (except cabbage) and saute for 4-5 mins.
  3. Add cooked and drained barley into the pan along with the remaining ingredients and saute for a further 5 mins.

  1. Season shrimp (with shell) with salt, black pepper and green seasoning and set aside.
  2. In a medium pot heat oil, add onion, garlic and ginger and saute for 2-3 mins.
  3. Add shrimp into the pot along with the remaining ingredients and a splash of water cook until shrimp becomes pink.
