Cold Soba Bowl with Peanut sauce

We love mixing up our meal preps because to be honest, we get bored! Such an easy low cal (approximately 300 calorie) meal that you can whip up in the time it takes to boil the soba noodles (well almost 😋). Pull out your (electric) grill and get cooking. You can replace the vegetables for ones you like! Just add up the calories.

  • 1 tbsp green seasoning (5cals)
  • 4 tbsp peanut butter (320)
  • 1 tsp sesame oil (40)
  • 1 tbsp soy sauce (10)
  • 1 tbsp sriracha (25)
  • 1 tsp grated ginger (2)
  • 1 tsp grated ginger (2)
  • 2 cloves grated garlic, finely minced (10)

  1. Sauce – Mix ingredients, add 2-3TB water, salt and black pepper to taste, makes 6 servings at 70cals each
  2. For the chicken I simply seasoned it with green seasoning, salt and black pepper to taste and grilled it for 7-8mins (2 oz cooked) 92 cals
  3. Lastly I paired the sauce and soba noodles (0.5 oz for 50 Cals) with some grilled baby bok choy, zucchini, carrots, mushrooms and red cabbage! Pour the sauce over the entire thing right before you eat, toss and enjoy!
