Baked Cauliflower Mashed “Potatoes”

Comfort food that is also kind of healthy? Yes please! This creamy mashed cauliflower tastes exactly like the real thing!


  • 1 large head of cauliflower
  • 1/4 cup sour cream
  • 1/4 cup Parmesan cheese
  • 2 Tbsp Coconut oil (we used CGA Garlic Infused Coconut oil)
  • 1/4 tsp Dijon mustard
  • 1/4 cup Cheddar cheese,grated
  • 1/2 tsp salt
  • 1/4 black pepper
  • 1/2 cup corn kernels
  • Chives


  1. Chop cauliflower into small florets, place in steamer and steam until soft
  2. Allow cauliflower to cool for 15 mins. In small batches place the steamed cauliflower in some cheese cloth and squeeze out the excess water thoroughly
  3. Add cauliflower along with the butter, sour cream, Parmesan cheese, salt, black pepper and Dijon mustard to a food processor and process until smooth and creamy
  4. Add chopped chive and corn to theΒ  cauliflower mixture and mix by hand
  5. Grease a baking dish and empty the cauliflower into the dish sprinkle the top with cheese and bake at 350F for 15 mins or until golden brown
