- 1 large head of cauliflower
- 1/4 cup sour cream
- 1/4 cup Parmesan cheese
- 2 Tbsp oil
- 1/4 tsp Dijon mustard
- 1/4 cup Cheddar cheese,grated
- 1/2 tsp salt

- 1/2 cup corn kernels

Chop cauliflower into small florets, place in steamer and steam until soft
- Allow cauliflower to cool for 15 mins. In small batches place the steamed cauliflower in some cheese cloth and squeeze out the excess water thoroughly
- Add cauliflower along with the butter, sour cream, Parmesan cheese, salt, black pepper and Dijon mustard to a food processor and process until smooth and creamy
- Add chopped chive and corn to the cauliflower mixture and mix by hand
- Grease a baking dish and empty the cauliflower into the dish sprinkle the top with cheese and bake at 350F for 15 mins or until golden brown
