Choy Sum Moruga Hill Rice

  • 8 choi sum stems, sliced
  • 3/4 cup Moruga Hill rice
  • 1/2 cup coconut milk
  • ginger, finely diced
  • onion, finely diced
  • garlic, finely diced
  • bell pepper, chopped
  • 2 Tbsps Sesame seeds
  • 1/4 cup cashew nuts
  • Chive, chopped
  • Chilli oil

  1. Boil rice according to directions with salt and coconut milk
  2. Sautee onions, garlic, ginger, bell pepper, choy sum and nuts in Chilli oil
  3. Season with black pepper and salt to taste
  4. Stir in rice and chive until vegetables are evenly distributed
