Vegan Chocolate Cake with Coconut filling

This delicious, rich cake is anything but boring. A perfect treat that almost anyone can eat. Perfect for get-togethers with vegan friends and no one will know the difference. With recipes like these, who needs dairy??

 

For the cake

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup vegetable oil
  • 1 tsp mixed or vanilla essence
  • 1 tsp white vinegar
  • 1 Tbsp instant coffee + 1 Tbsp hot water

For the filling

  • 1/2 cup coconut milk
  • 1/2 cup grated coconut
  • 1 Tbsp Honey
  • 1/4 tsp mixed or vanilla extract

For the frosting

  • 1/2 cup cocoa powder
  • 1/2 cup icing sugar (or to taste)
  • 1/3 cup margarine, softened
  • 1/2 tsp mixed or vanilla essence

  1. To make cake, sift dry ingredients, mix in wet til smooth, pour into cups and bake at 350F for 20 minutes (do the poke test, it if comes out clean, its done!)
  2. To make Coconut filling, simmer ingredients on medium heat until thick, let cool
  3. To make frosting, beat margarine, cocoa powder and essence, Add icing Sugar to taste (the cake isn’t very sweet!), texture should be smooth and spreadable.
  4. scoop hole out of cooled cake, fill with coconut filling, replace top and frost!
