Mexican Quinoa Bowls

Back again with another low calorie meal prep! These Mexican inspired quinoa bowls are sure to hit the spot. They are packed with protein and veggies making them extremely filling. Only 278 calories per serving, low on calories but high on flavour.

  • 90g dry quinoa, boiled according to package (320 cals)
  • 128g broccoli (44 cals)
  • 170g red kidney beans (124 cals)
  • 50g sweet peppe,r finely chopped (10 cals)
  • 50g onion, finely chopped (20 cals)
  • 50g celery stalk, finely chopped (8cals)
  • 100g corn kernels (64 cals)
  • 1 chicken- tomato stock cube (15 cals)
  • ¼ tsp salt
  • ½ tsp ground cumin (4 cals)
  • ½ tsp chili powder (4 cals)
  • 1 tsp lime juice (1 cal)
  • ½ tsp chili oil (20 cals)
  • ½ tsp veg oil (20 cals)

TOTAL Kcals = 654

4 servings – 164 cals per serving

  • 12 oz chicken breast (408 calories)
  • 1 tsp salt
  • 1 tbsp fresh green seasoning (5 cals)
  • 1 tsp ground cumin (8 cals)
  • 1 tsp chili powder (8 cals)
  • ¼ tsp red chili powder (2 cals)
  • ¼ tsp black pepper (3 cals)
  • 1 tsp onion powder (8 cals)
  • 1 tsp garlic powder (10 cals)
  • 1 tsp lime juice (1 cal)

TOTAL Kcals = 453

  1. In a large pot heat oil and sauté onions, sweet peppers and celery until tender.
  2. While veggies are sautéing cut broccoli into small florets, add florets into a food processor and pulse until a rice like texture is achieved.
  3. To the sautéed veggies add all your spices and salt along with cooked quinoa, riced broccoli, corn and red kidney beans. Allow to cook for another 7- 8mins. Finish it off with a squeeze of fresh lime juice and a sprinkle of parsley and serve.

  1. Preheat your electric or cast iron grill. Season chicken breasts with green seasoning along with chili powder, cumin, salt, black pepper, red chili powder, lime juice, onion and garlic powder
