Beet Cheese Paste

This spread is STUNNING but so delicious and pretty healthy as far as cheese goes. The base is roasted beets for that sweet, earthy taste but it is complemented perfectly by the briny feta.



  • 1/3 cup roasted beets (chopped in 1/2″ cubes, rubbed with oil, baked until cooked through and browned)
  • 1/4 cup walnuts
  • 2 Tbsp parmesan
  • 1/4 cup feta
  • 3 garlic cloves
  • 2-3 Tbsp Olive oil
  • Black pepper
  • Water


  1. Pulse beets, nuts, cheeses and garlic in food processor
  2. Add oil to make smoother
  3. I add a little water to make even smoother instead of even more oil
  4. Serve with crackers or as a dip for vegetables, or even in pasta!
